DRAFT + BEER TO-GO

BEERS ON DRAFT

Tiny Pils

Pilsner 3.8%
Easy on the ABV, but heavy on the heart, this one leans into the Saphir hop varietal. We notice white floral blossom, ciabatta bread, fresh cut grass, raw clover honey like malt depth, and a cleansing minerality. An absolute staple around these parts, this beer always feels like home.

Czech Pale Lager

Lager 4%
In the mystique of the astoundingly cool Czech beer culture, nearly every beer on a menu has its starting gravity listed beside it, let alone the fact that some breweries will just name the beer “10P”.

Ember

Lager - Smoked 5%
We really do love smoked beers but rarely find the opportunity to fit them into our schedule and actually get them into a tank. Given the impending heat season, we felt we had to get this one ready for summer.

Kolsch

Kolsch 5%
Brewed with 100% Epiphany Craft Malt, consisting of pils malt and a small portion of malted wheat. Hopped delicately in the kettle with German Saphir, lagered for weeks, and slowly carbonated without the use of a sintered stone for the utmost in fluffy meringue like head.

Precursor Pils

Pilsner 5.5%
Precursor returns as our delicately built, dry hopped pale lager at 5.5%. Dry hopped with Mandarina Bavaria and Saphir, this one is less about hop saturation, and more about the blending of two different hop varietals with one of our preferred pale lager grists, and a variant of our favorite German lager strain.

Field Hymns

Lager - Vienna 4%
This obscure beer style was discovered in an old brewing book our production manager was reading a few months back. Brewed by and for Viennese farmers, this beer incorporates a hefty dose of malted wheat, higher starting and finishing gravity, and an uncommon blending of two yeast strains. Expect a Vienna lager-adjacent beer with a rustic, more expressive character. Fruitier than most lager styles, you may notice impressions of spiced figs, walnuts, pumpernickel bread, brown sugar toast, and green banana - likely coming from the yeast blend.

Baby Falcon

IPA - Session New England • 4.5%
We notice impressions of tropical citrus, bright navel orange and grapefruit, dark berry, and hints of slight pine and mint laced dankness. Entirely drinkable for the day, and equally forgettable as it is impactful.

Hatchling

IPA - Session New England 4.5%
Our beloved Citra and Mosaic based alternate house IPA gets its own baby variant.

Brewed with the same framework as the fully grown-up version, but with a much more sessionable ABV at 4.5%. We notice orange sherbet, guava, slight dankness, melon, and un-ripened orange hop character with a plush and fuller mouthfeel that belies the ABV.

Public Lands

IPA - American 6%
Roughly 62% of all land in Idaho is public – 32 million acres worth of incredible landscape and outdoor experiences that are readily available to those who live and travel to what still feels like a ton of undiscovered western wilderness.

In the spirit of that state’s storied history of agriculture comes the varietal Idaho 7. Originally released from just outside of Boise back in 2015, while not necessarily new, this hop makes itself known with what we perceive to be flavors of pineapple, white gummy bear, dole orange juice, and a delicately dank grapefruit rind character. For this batch, we introduced a measured amount of Citra to augment the brighter, tropical character already so prevalent in this beer.

Clever Girl

IPA - American 6%
Our incredibly light bodied, soft and dryer American IPA with impressions of tropical citrus, dark berry, grapefruit pith, and orange-soaked pine. This beer is hopped with our hand selected Citra and Mosaic.

Fledgling

IPA - American 6%
The DWR’s work – Falcon cam, banding, and all their other conservation efforts on behalf of Virgina wildlife, including the Peregrine Falcon, is nothing short of astounding. Watching a group of passionate people deeply care about, and set to work on achieving a common goal felt a lot like what our team do for beer.

Falcon Smash

IPA - American 7%
Brewed with a softer grist of North American 2 Row and Malted Wheat, fermented with our expressive house ale yeast, and dry hopped with a focus on the Falconers Flight hop blend, this beer delivers on balanced hop and yeast character of brighter citrus, orange pine marmalade, and stone fruit cohesion.

Twice As Clever

DIPA - Imperial 8%
After a decade of Clever Girl as one of our original single IPA offerings, a doubling of such a beer seemed like the right thing to do for our anniversary. Brewed in and with the exact same thought process and ethos that we use to brew the single version, this one clocks in at, you guessed it, 8% ABV because they all just should… so we say.

Nectar & Knife

DIPA - Imperial 8%
Our house DIPA, hopped extensively with one of our all-time favorite and earliest hop combinations: Simcoe and Mosaic.

Hearth

Stout - Irish Dry 4.5%
This one was brewed with and in celebration of the most iconic grist ratio from the family of beers that cemented Irish stouts forever, lest we forget. While that brewery, who will go unnamed here, is famous for their drier take on stout, they also offer what they call a Foreign Extra version, and its wildly popular in the not cold ever, Caribbean – dark beers only for cold weather be damned.

This beer is inspired equally by both ends of the stout spectrum.

Carbonated, slightly chewier and a touch sweeter much like the Extra, but featuring the aforementioned dry stout malt array, this one delivers on impressions of creamy cold brew, sweet wispy campfire smoke, and toasted dark chocolate covered almond.
